源於西貢布袋澳漁村,我們於1990年創立,最初旨在為本地漁民和水上人提供肉食選擇及傳統海鮮料理。餐廳大廚布有輝先生,自十六歲入行以來,輝哥憑藉精湛廚藝和對蜑家菜餚的深厚理解,帶領金東大餐廳在過去三十年裡不斷轉型升級,從小炒、點心、燒鴨粉、煲仔飯到蜑家海鮮,樣樣精通。如今,金東大繼續致力於將傳統蜑家海鮮做法原汁原味地呈現給食客。

Stemmed from Po Toi O Fishing Village in Sai Kung, Kam Tung KItchen was established in 1990 aimed to provide meat dishes and traditional seafood cuisine to local fishermen. The restaurant's owner and head chef, Fai. Fai has entered the culinary industry at the age of 16, Fai, with his exceptional culinary skills and deep understanding of Tanka cuisine, has led us through a continuous transformation and upgrade over the past three decades, mastering everything from stir-fries and dim sum to roasted duck rice, clay pot rice, and Tanka seafood. Today, we have transformed into a Tanka seafood private kitchen dedicated to presenting the authentic flavors of traditional Tanka seafood to its guests.

自1990年開業至今,金東大始終如一地致力於為香港賓客呈現正宗蜑家菜餚。我們由一群熱愛美食的本地水上人組成,深諳蜑家飲食文化的精髓。我們嚴選優質新鮮的食材,尤其是本地香港海鮮,並遵循正宗蜑家人的多年秘製煮法,精心烹飪出每一道菜品,讓您品嚐到最原汁原味的蜑家風味。

什麽是蜑家人? Who are the Tanka?

蜑家人,又稱「艇戶」、「船戶」、「水上人」,是中國南方沿海地區的一個古老民族,世世代代以舟為家,以捕魚為生。我們的精神象徵著堅韌、適應力和多元的文化。

蜑家人的歷史可以追溯到秦漢時期,我們主要分佈在廣東、福建、浙江等省份的沿海地區。我們世世代代秉持著自身的文化特色,至今仍努力傳承著這份美好的傳統。

與大海的密切聯繫塑造了蜑家獨特的習俗、傳統和飲食文化。蜑家人素以精通海鮮著稱,講究「不時不食,不鮮不食」,餐桌上常以新鮮的海鮮為主。無論是在獲取海鮮食材方面,還是烹飪技藝上,都無人能出其右。

我們蜑家水上人是誰呢?

  • 我們大多崇奉洪聖大帝、北帝、觀音菩薩、天后娘娘等神明,祈求風調雨順、出海平安、保佑生活安康。

  • 飲食講究「不時不食」,注重食材的新鮮和時令性。由於日常飲食主要以海鮮為主,其他肉類就顯得彌足珍貴。過去,水上人在避風塘售賣漁獲後,常會特意上岸吃上一口肉。而難得上岸的蜑家人則尤為喜愛燒臘粉麵類的美食

  • 生活與生計都離不開船艇。他們世代居住在船上,以船為家,同時也是謀生的工具。這種獨特的居住方式體現在「連家船」上,即一家人居住在一艘船上。

  • 捕魚是我們的傳統生存之道,代代相傳。自幼,我們的主廚便隨父母出海捕魚,閒暇時則撐船在泳灘接載乘客,賺取零花錢

 

The Tanka, also known as "boat people" or "water people," are an ancient ethnic group residing in the coastal regions of southern China. For generations, we have made their homes on boats and earned their livelihoods through fishing. Our spirit embodies resilience, adaptability, and a rich cultural heritage.

The Tanka people's enduring legacy is a testament to their resilience, adaptability, and deep connection to the sea. Their rich cultural heritage, embodied in their traditions, customs, and culinary practices, serves as a reminder of their profound connection to their ancestral roots and the enduring power of their spirit.

A History Rooted in the Sea: The Tanka people's history can be traced back to the Qin and Han dynasties, with our primary settlements concentrated along the coastlines of Guangdong, Fujian, and Zhejiang provinces. Throughout their history, we have steadfastly preserved their unique cultural identity, passing down their cherished traditions from generation to generation.

A Culinary Culture Shaped by the Sea: Our profound connection to the sea has shaped the Tanka people's distinctive customs, traditions, and culinary culture. Renowned for our expertise in seafood, they adhere to the principles of "eating in season" and "consuming only fresh produce," ensuring that their tables are always laden with fresh seafood delicacies. Our mastery extends not only to sourcing fresh seafood ingredients but also to their culinary techniques.

  • Religious Beliefs: The Tanka people revere deities such as Hung Shing, the Northern Emperor, Guanyin, and Tin Hau, seeking blessings for favorable weather, safe voyages, and overall well-being.

  • Culinary Culture: The Tanka people's culinary traditions emphasize "eating in season" and prioritize the freshness and timeliness of ingredients. Due to their predominantly seafood-based diet, other meats hold a special place of value. 

  • Lifestyle: The Tanka people's lives and livelihoods are inextricably linked to their boats. For generations, they have lived on boats, making them their homes and primary means of sustenance. This unique living arrangement is evident in their "linked-house boats," where entire families reside on a single vessel. 

  • Livelihood: Fishing has been the cornerstone of the Tanka people's livelihood for generations, passed down through the ages. From a young age, our head chef accompanied his parents on fishing expeditions, and during downtime, he would ferry passengers at the beach to earn extra pocket money.
